Frizzled Salt Fish

An alternative use of the salted fish typically associated with Bajan fishcakes

Ingredients:

? lb. salt fish, 2 rashers bacon or slices of ham, Piece red pepper, 1-2 eggs, Black pepper, Few blades of eschalot, 1 chipped onion, Sprig sweet marjoram, 1 large tomato

Method:

Soak salt fish, squeeze dry and pound fine. If fish is hard, boil first. Cut up bacon or ham, also seasonings and mix with fish. Melt the fat in frying pan, stir in fish and seasonings. Just before removing from heat, stir in one or two beaten eggs, and remove as egg is cooked. Garnish with parsley and serve with split peas and rice.
