Pickled Breadfruit

An easy means of preparing a tradtional Barbadian food.

Ingredients:

breadfruit, lime juice, onion, salt, pepper

Method:

Peel, core and cut an under-ripe breadfruit in 1? slices. Boil in salt water. Prepare pickle of lime juice, chipped onion, salt and pepper. Pour this over breadfruit cut in pieces in a dish. Keep warm and when ready to serve spread with butter. Salted fish or meat is a good accompaniment for this dish. Green bananas may also be pickled.
